The prices that I have been able to find from Rome to Munich are aweful. However I found a roundtrip ticket about 500 dollars cheaper than one way. What would happen if we only go from Rome to Munich but not back?

Back in the good old days of actual %26quot;TICKETS%26quot;, airlines used to call this %26#39;a no show%26#39; and a full fare ticket would be valid for a future flight - just make a new reservation with no penality.
Depending upon the restrictions on the round-trip ticket that you may purchase, you might be able to get a refund on the Munich to Rome ticket that you do not use.
